Abstract

Статья посвящена разработке и внедрению системы ХАССП на предприятии ОАО «Ленинск-Кузнецкий хлебокомбинат», основным направлением которого является производство хлебобулочных изделий. Определены опасные факторы производства, критические контрольные точки и классификация мероприятий по управлению, установлены критерии эффективности их внедрения. С учетом разработанной системы проведены апробации рецептур и технологии, определены регламентируемые показатели качества и безопасности продукции.
