Abstract

Процесс выявления физических резервов и нейтрализации физических рисков в системе сбалансированных потенциалов пищевого производства ресурсного, производственного и потенциала потребления представляется следующим образом. На стадии производства сырья должны быть выявлены и реализованы физические резервы, приводящие к увеличению количества и улучшению качества сырья, а также нейтрализованы физические риски за счет улучшения его экологической чистоты, тогда и на стадии переработки сработает принцип "передачи конкурентных преимуществ".
