Abstract

В настоящее время большое внимание рассматривается вопросы производства мяса птицы -индейки и продукции его переработки на примере птицекомплекса «Ордабасы -құс» Ордабасинского района Южно-Казахстанского области (ГП ФИИР-1) РК.. Исследование проводили в настоящее время в ТОО «Ордабасы -құс» ЮКО по переработке птицы -индейки в качестве вторичного сырья уходит до 7-8% от массы птицы, и оно практически частично перерабатывает, но в тоже время является ценным пищевым диетическим сырьем, которое содержит белки, жиры, витамины макро-и микроэлементы. Данная проблема заинтересовала ученых ЮКГУ им.М. Ауззова, в настоящее время совместно ведут научно -исследовательские работы со студентами в этом направлении.
