Abstract

В статье представлены идентификационные признаки и потребительские свойства различных видов мучных восточных сладостей. Уделено внимание факторам, формирующим их качество. Проведен сравнительный анализ ассортимента мучных восточных сладостей на предприятиях розничной торговли г. Омска. Было установлено, что преобладающими видами изделий являются пахлава, курабье и чак-чак. Органолептические показатели опытных образцов в целом соответствовали стандарту и технологическим описаниям
