Abstract

В статье представлены сведения о фруктово-ягодных кондитерских изделиях, являющихся продуктами переработки плодов (овощей) и ягод, консервированных сахаром. Рассмотрены вопросы современной терминологии и классификации фруктово-ягодных кондитерских изделий. Определены их важнейшие идентификационные признаки и показатели качества, необходимые для проведения экспертизы.
