Особенности Расчета Резервов На Предприятиях Общественного Питания

Abstract

Статья посвящена созданию резервов на предприятиях общественного питания в условиях риска и неопределенности для обеспечения принципа непрерывности. Каждый вид резерва можно детализировать в соответствии с особенностями деятельности предприятий общественного питания. Автором предложен порядок формирования группы резервов, используемых при построении резервного комплекса, основанный на риск-ориентированном подходе. Выявлено соответствие особенностей деятельности предприятий общественного питания, выявленного риска и создаваемого резерва. Для оценки создаваемых резервов разработан методический подход, включающий расчет процентного и стоимостного показателей, основанных на размере составленной сметы, проценте естественной убыли и порчи продукции. Оценку эффективности формирования резервного комплекса предложено проводить как качественным методом с помощью тестов, так и количественным через расчет показателя достаточности резервов.
