Abstract

Статья посвящена проблемам обеспечения производства безопасных молочных продуктов высоко уровня качества из сырья экологически неблагополучных территорий. Выявлены факторы контаминации молочного сырья и перехода вредных веществ в продукты его переработки. Обосновано внедрение организации контроля и мониторинга за качеством и безопасностью молочных продуктов на основе ГОСТ Р ИСО 22000-2007.
