Abstract

Статья посвящена изучению влияния рябинового порошка на качество и процессы черствения хлебобулочных изделий. Авторы рассматривают возможность использование рябинового порошка, выработанного из выжимок рябины обыкновенной сортовой (S. aucuparia L) в качестве обогащающей добавки в хлебобулочные изделия. Высокое содержание в добавке биологически активных веществ (БАВ) будет способствовать повышению пищевой ценности, пектиновых веществ сохранению свежести хлебобулочных изделий, а значит, повысит конкурентоспособность данной группы товаров.
