Abstract

[eng] The qualification processes of products and «terroirs»: the case of the french controlled denomination of origin - This contribution aims to present issues from a survey carried on within the French institution 'INAO'(Institute for Denomination of Origin) which is in charge of the implementation of the EC regulation about Protected Denomination of Origin. The main objective is to observe the qualification processes of products and 'terroirs' used by the INAO's agents and to analyse their coherence with regard to the diversity of products, INAO's agents most often agree with each others to common choices of homogeneously defined concepts of Denomination of origin. Netherthe- less, some concepts are quite difficult to define and to use on an homogeneous way, such as 'terroir'. [fre] Comment l'INAO et ses agents qualifient-ils les produits et les terroirs dans le cadre de l'AOC? C'est de cette question que cet article se propose de traiter à partir des résultats d'une enquête menée auprès des agents de I'inao sur la définition et l'utilisation des grandes notions liées au domaine de l'AOC. Il s'agit de montrer, par cette entrée méthodologique, comment au sein de l'INAO se construit la cohérence entre la diversité des produits et la logique de leur qualification en tant qu'AOC. La première partie établit la façon dont les agents ont dans le choix et la définition des notions importantes de leur pratique professionnelle signifié une culture interne marquée centrée sur la logique de qualification des aoc. Elle montre qu'au-delà de cet accord sur ce qu'est I'aoc, les agents interrogés ont défini diversement certaines notions importantes mettant ainsi en question la variabilité des conditions d'application de ces notions aux contextes spécifiques des aoc. La seconde propose certaines pistes d'élucidation de cette question à travers l'étude de l'application de cette logique de qualification à la diversité des appellations.
