Abstract

[fre] À travers une analyse des disponibilités nutritionnelles indiennes et de leur accessibilité, cet article centre l'attention sur un nutriment peu considéré, les lipides, en exposant conjointement les déterminants de sa chaîne de fabrication, de distribution et de consommation. Le constat qu'il existe une prévalence d'insuffisance lipidique beaucoup plus prononcée que pour les glucides et les protéines, notamment au sein des populations rurales, conduit aussi à évaluer la part de responsabilité des politiques alimentaires -en particulier de la Révolution Verte - dans cette situation au coût social élevé. [eng] Food policy and nutritional security the critical case of lipids in India . Through the analysis of the Indian nutritional availability and accessibility, this paper focuses mainly on the determining factors of production, distribution and consumption of lipids. It can be stated that there is a much more severe deficiency of lipids than the one of carbohydrates and proteins, especially among the rural population. This leads to assess the role of food policies - especially those related to the Green Revolution - in this socially expensive situation.
