Abstract

[eng] Milk : a "pure, natural produce" ! A case study in Senegal . The ensuing study derives from a collective analysis of dairy industrialisation schemes in Sahelian Africa. It treats of milk production and the part played by local beliefs in the frame of socio-economic changes. [fre] Cette réflexion, inspirée d'une étude collective sur les processus d'industrialisation laitière en Afrique sahé- lienne (1), analyse la fonction de la croyance dans un contexte de mutation socio-économique.
