Abstract

[eng] Quality notions in food processing industries Pratical and theoretical topics. . Quality management methods are quickly evoluting. Changes involve product design and production specification monitoring, labelling, evaluation, analysis and measurement methods. A renewed notion of quality is emerging, and becomes the subject of debates in professional, political and social scientists circles. This paper aims at fostering an interdisciplinary debate in what concerns the agro food sector. It describes the main economic issues which involve quality, and suggest five main themes to tackle this multiple facet objet. [fre] Qu'il s'agisse de la conception et de la spécification des produits, de leur production et de leur contrôle, ou encore de l'identification et de la garantie des marchandises, les critères d'évaluation, les méthodes de mesure et d'analyse, les principes et les instruments de gestion de la qualité sont en pleine mutation. La réactivation des débats et des réflexions autour de ces questions depuis quelques années dans les milieux économiques, politiques et sociaux, indique un profond renouvellement de la problématique de la qualité. L'article vise à engager les sciences sociales dans une réflexion interdisciplinaire sur ce renouvellement dans le secteur agro-alimentaire. Il indique les grands enjeux économiques de la qualité et propose d'aborder l'analyse de cet objet aux multiples facettes à travers cinq thèmes.
