Abstract

[eng] By-products in wine industry are producted by differenciated firms, using separates processes, with various profits. The description of alternative technics and on analysis of by-products markets give indications on relations between technics, market structure and profitability. The effects on setting up activities are taken out. [fre] Les sous-produits de la filière viticole font l'objet de diverses valorisations par des entreprises de tailles différentes, selon les divers procédés techniques et avec des niveaux de valorisation différenciés. . Une présentation des alternatives techniques associée à une analyse de ces différentes filières permet de s'interroger sur les relations entre les techniques, la structure industrielle et les niveaux de valorisation. Les conséquences en matière de création d'activité en sont tirées.
