Abstract

[fre] L'auteur recherche où est la qualité d'autrefois, un « autrefois » vécu différemment par chacun d'entre nous et par l'historien de l'alimentation. . A l'ère industrielle (1800-1950) les aspects et la conception même de la qualité se modifient considérablement avec les nouvelles conditions de la vie alimentaire, les altérations de la qualité hygiénique et marchande étant les plus préoccupantes. . La bonne qualité reste longtemps un privilège de classe et l'aliment, un moyen de ségrégation. Lorsque les temps changent avec l'extension du cercle des consommateurs de bons produits, la réaction des privilégiés de la nourriture est nettement perceptible. . Le problème est de savoir si les conceptions actuelles d'une certaine qualité ne sont pas - toutes proportions gardées - une certaine forme d'un retour à l'autrefois. [eng] The author looks back at the quality of the old days, a time which everyone of us experiences differently, including the historian of food customs. . During the industrial era, (1800-1950) the aspects and the very notion of quality changed considerably with new living conditions, sanatory improvements and marketing modifications being the most important. . During a long period, good quality was a class priviledge and food was a means of segregation. When the conditions changed and good quality products became obtainable by a larger category of consumers, the reaction of the priviledged was clearly perceptible. . The question is whether present conceptions of quality are not to a certain extent turning back to « what used to be ».
