Abstract

[fre] L'auteur s'interroge tout d'abord sur la façon dont la recherche agro-alimentaire peut prendre en compte les problèmes de l'alimentation, notamment en ce qui concerne : (a) la connaissance et l'analyse des différents besoins de l'homme et de ses comportements, (b) l'étude des caractéristiques des aliments en rapport avec ces besoins. Ensuite, il présente brièvement le potentiel de recherche français, pour conclure que la recherche agro-alimentaire doit tendre vers une recherche « intégrée » comportant, en articulation avec ses dimensions technologique et économique, une dimension nutritionnelle et une dimension socio-culturelle. A cette condition, elle pourra devenir un des piliers d'une politique alimentaire orientée vers l'amélioration de la qualité de la vie, et vers un renforcement des chances des produits français sur le marché national et international. [eng] The author first examines how food problems could be taken into account by the research institutions for farm and food products, in particular (a) the knowledge and analysis of different human requirements and behaviour patterns, (b) the study of food characteristics related to these requirements. The potential of French research is then presented and its positive aspects as well as its shortcomings are evaluated. The conclusion is drawn that research in the field of farm and food products should be « integrated », combining technological and economic aspects with nutritional and socio-economic considerations. It could thus become one of the pillars of a food policy aiming at improving the quality of life and promoting French products on national and international markets.
