La prise en compte de l'alimentation par les organisations de consommateurs

Abstract

[fre] Après avoir brièvement rappelé que l'alimentation revêt une dimension culturelle et politique considérable, l'auteur recense les préoccupations actuelles des consommateurs telles qu'elles s'expriment notamment à travers leurs organisations. La sécurité reste une préoccupation majeure ; à côté des questions qui relèvent de la toxicologie, l'intérêt pour la valeur nutritionnelle grandit. En matière de qualité, l'attention se porte sur les facteurs d'évolution qui se traduisent par un abaissement de la qualité notamment gustative, et sur le rôle des réglementations. On demande aussi des améliorations sur la connaissance de la formation des prix, et sur l'appréciation du « coût de la qualité », qui ne doit pas entraîner un renchérissement des aliments dans tous les cas. Pour une meilleure information des consommateurs, leur permettant d'exercer leur esprit critique, la lutte contre les secrets abusifs et les informations erronées doit être poursuivie. . Après avoir relevé-des convergences possibles entre la défense des consommateurs et celle des travailleurs et de l'environnement, l'accent est mis sur l'émergence d'une revendication nouvelle des consommateurs : être des partenaires actifs dans la définition de la politique alimentaire. [eng] After stressing the cultural and political scope of food consumption, the author examines the present preoccupations of consumers as they are expressed through consumer organizations. Security appears as a major concern ; beside toxicological problems, the interest in nutrition increases. In quality matters, attention is focused on the factors which lead to a deterioration especially in aroma and on the role of regulations. A better knowledge of price fixing is also wanted as well as of the « cost of quality » which should not necessarily lead to a price increase. A better information of consumers which enables them to practice their discernment requires a continued effort to oppose secrecy and misinformation. . The author examines the possible convergency between consumer defence and that of workers and of environment, and then stresses a new claim put forth by consumers : to become active partners in the definition of a food policy.
