Couches paysannes et élevage charolais dans le Nivernais

Abstract

[fre] Après avoir très rapidement retracé les grands traits de l'introduction et de la production d'animaux de race charolaise dans île Nivernais Central, cet article propose un regard particulier sur la dynamique actuelle de cette production dans la région considérée. Ayant remarqué qu'à quelques nuances près, \a grande majorité des exploitations agricoles produisent des animaux maigres vendus entre 18 et 24 mois, il' auteur s'attache à présenter îles couches sociales de producteurs, et à rechercher les effets qu'exerce sur chacune d'elles l'adoption de ce type de production. La pérennité de ce système de production apparaît au terme de'l'article reposer ilargement sur une alliance inégale entre deux couches de producteurs. Cependant, le fait que 'l'étude se réduise aux seules couches de producteurs agricoles et ne concerne pas l'ensemble des agents économiques de lia filière viande, réduit la portée des conclusions qu'on en peut tirer relativement à l'avenir de ce système de production dans cette région. [eng] This article first outlines the introduction and the production of charolais stock in the Central Nivernais region and then more specifically considers its present evolution in this region. The writer notices that the majority of the farms produce unfattened stock, sold between 18 and 24 months, and then presents the social origin of the farmers and examines the factors that encourage them to adopt this type of production. . The long-standing nature of this production system seems to depend mostly on an unegual alliance between two types of producers. Nevertheless the fact that this survey is limited to the farming population alone and does not cover all the economic agents in the meat network, reduces the scope of the conclusions that can be drawn with regard to the future of this production system in this region.
