Recuperación del patrimonio gastronómico de la provincia de Buenos Aires

Abstract

Se abordan las relaciones entre gastronomía, turismo y fiestas en la provincia de Buenos Aires, con el objetivo de establecer las pautas que permitan la Recuperación del Patrimonio Gastronómico de la Provincia, diversificando la oferta turística ofrecida por los municipios que la integran. Para ello, se recurre a la compilación histórica y de recetas, que permitan entender el desarrollo de la gastronomía en la provincia de Buenos Aires, desde el habitante originario hasta los inmigrantes, incluyendo la época colonial y aquella gastronomía relacionada con la figura gauchesca. Según datos relevados para este trabajo, existen 205 fiestas en donde se realizan platos típicos, distribuidas de la siguiente manera: 1 relacionada con los habitantes originarios, 12 con la época colonial, 112 con los gauchos y 80 con inmigrantes. Estos datos permiten establecer pautas que se sugieren en el trabajo, con el fin de recuperar y salvaguardar el patrimonio gastronómico de la provincia de Buenos Aires.
