Cambio en los patrones de consumo en México el caso del maíz, el trigo y el frijol (1992-2004)

Abstract

Los cambios en los patrones de consumo están en función del ingreso que perciben los miembros de los hogares mexicanos. En este trabajo se indagó el porcentaje que destinó la población, agrupada en deciles, a tres productos básicos de la dieta nacional: maíz, trigo y frijol, diferenciando el gasto en monetario y no monetario, con base en la información de la Encuesta Nacional Ingreso Gasto de los Hogares (enigh) 1992, 1994, 1996, 1998, 2000 y 2002. El problema se refiere al hecho de que en México, a la par que se dio un proceso de industrialización, la población tendió a concentrarse en el ámbito urbano, de manera que los patrones de consumo fueron cambiando de una dieta básicamente rural a otra urbana, lo que de entrada marca una distinción en la utilización de insumos para la comida, donde unos eran más naturales y otros más industrializados. Este proceso se fortaleció con la expansión cultural vivida en el país durante la segunda mitad del siglo xx, llamada modernización, si bien se supone que adquirió rasgos específicos por región económica, cultural y geográfica./ We can see that the changes in the consumption patrons are in function of the income which perceive the members of the Mexican homes. Because of the percentage that the population destined, grouped in deciles to three basic products of the national diet was investigated: corn, wheat and bean, differentiating the monetary and nonmonetary expenditure in, with base in the information of the Encuesta Nacional Ingreso Gasto de los Hogares (enigh) 1992, 1994, 1996, 1998, 2000 and 2002. The problem refers the fact that in Mexico, jointly that occurred an industrialization process, the population tended to concentrate in the urban scope, so that the consumption patrons were changing from a basically rural diet to another urban one, which shows a distinction in the use of inputs for the food, they use to be more natural and the other more industrialized. This process was fortified with the cultural expansion lived in the country during the second half of xx century called modernization, although, assumes that it acquired specific characteristics depending of economic cultural and geographic region.
