Food Waste and Performance Measurement Systems: A Systematic Review of the Literature

Abstract

This paper aims to present an analysis of the scientific output on performance measurement and food waste as well as the trends and challenges in the field. Food waste increases food insecurity and misuses scarce natural and financial resources. However, there are many difficulties in measuring waste at the aggregate level, and the various ways used in companies lack a systemic approach. A systematic literature review was conducted using bibliometrics to guide the content analysis. The results indicate a lack of articles focusing on performance measurement systems for the whole supply chain with an emphasis on sustainability. The application of digital technologies to performance measurement systems is a trend that was observed. That opens an opportunity for research that aims to better quantify food waste and contribute to reduce food insecurity.
