Turismo e gastronomia em Minas Gerais sob a ótica do desenvolvimento de produto

Abstract

Este artigo discute a formatação de produtos no segmento do turismo e da gastronomia, ou da indústria da hospitalidade, segundo uma lógica do Design Thinking e de outras abordagens de criação e formatação de produtos e serviços. O estudo utiliza-se de casos analisados no estado de Minas Gerais, comparando-os a outros destinos turísticos no mundo. Conclui-se que não se usam metodologias de formatação de produtos no universo estudado e propõe-se que estas sejam adotadas.
