Satisfacción y percepción del turista extranjero sobre la gastronomía quiteña

Abstract

El objetivo de esta investigación es conocer el nivel de satisfacción del turista extranjero sobre la gastronomía local de Quito y la percepción sensorial de los alimentos consumidos durante su estadía valorados según los sentidos clásicos. Se aplicó un estudio cuantitativo no experimental mediante un análisis paramétrico sobre los datos obtenidos del coeficiente de correlación de Spearman, cuyo resultado demostró que existen una relación significativa entre la presentación, tamaño, textura, olor y sabor gastronómico con el nivel de satisfacción del turista extranjero. Por otro lado, ciertos perfiles de turistas valoraron la gastronomía quiteña en un rango de regular a bueno, situándose éste por debajo de su excelencia, donde la percepción sensorial influye en el consumidor.
