Los estilos gastronómicos comfort food y de la gastronomía molecular cómo posibles fusiones en la cocina del futuro en Buenos Aires

Abstract

Este estudio tiene por objetivo verificar las probabilidades existentes en Buenos Aires de realizar un cambio en el denominado comfort food, con el fin de fusionarlo con la Gastronomía Molecular. El ensayo destaca la transición alimenticia ocurrida en Argentina con el pasar de los años hasta llegar a la actualidad, proponiendo solucionar los problemas causados por la mala alimentación originada por la falta de tiempo para dedicarse a cocinar.
