Estado Del Arte Y Avances En La Elaboración De Helados

Abstract

La naturaleza humana, en la actualidad, se ve atraída hacia los alimentos ricos en sabor y sensaciones. De esta manera, los postres constituyen un tipo de alimento altamente demandado por los consumidores de productos azucarados. Uno de estos postres lo constituye el helado (postre congelado), el cual cuenta con un sabor agradable al paladar y al mismo tiempo proporciona sensaciones de frescura y bienestar. Así, en este artículo realizamos una revisión bibliográfica sobre los avances en materia de formulación y elaboración de este producto alimenticio. En él se tratan los fundamentos científicos de su proceso de producción y las tendencias actuales de formulación, que lo ha llevado a evolucionar hacia un producto funcional con beneficios inmediatos hacia la salud de la persona que lo consume.
