Biotecnología E Inocuidad De Los Alimentos

Abstract

Desde hace tiempo las aplicaciones de la biotecnología han sido innumerables, desde la elaboración de quesos, vinos, cervezas y pan, hasta la producción de medicamentos o nuevos alimentos. El desarrollo de técnicas e instrumentos de investigación biotecnológica han dado lugar a importantes descubrimientos y además han facilitado las aplicaciones en seres vivos para beneficio de la humanidad. Los países han adoptado distintos enfoques legislativos y no legislativos para reglamentar los alimentos obtenidos a partir de Organismos Genéticamente Modificados (OGM), por lo que los criterios que se utilizan para evaluar la inocuidad de estos productos suelen ser coherentes entre países. No obstante, la evaluación de la inocuidad de los alimentos genéticamente modificados son procesos que se sitúan dentro del marco establecido para la evaluación de riesgos. La evaluación de la inocuidad es, fundamentalmente, el primer paso en la identificación de cualquier peligro asociado a los alimentos, tras lo cual se evalúan los riesgos para la salud humana.
