La calidad una metodología innovadora y sostenible en la producción de frutas deshidratadas

Abstract

Las frutas es un segmento muy importante para la sostenibilidad a nivel mundial, por presentar un alto nivel de consumo y de producción, Esto permite que el sector agroindustrial utilice metodologías de conservación térmica deshidratación para preservar, mantener la calidad y así prolongar su vida útil del producto. La finalidad que tuvo este trabajo investigativo de carácter bibliográfico, fue el de establecer la metodología para la implantación de un sistema de gestión de la calidad según los requerimientos de cumplimiento con la aplicación del circulo de mejora continua y de esta manera buscar el posiciamiento de imagen de la producción local Ecuatoriana de frutas deshidratadas con potencial de explotación. Adicionalmente se consideró parámetros técnicos del proceso de deshidratación como temperatura, tiempo de duración del proceso, calidad de la frutas, desarrollo sostenible, y principales países de explotación del producto en estudio.
