Plan de exportación de frutas tropicales liofilizadas al mercado de Emiratos Arabes-Dubai

Abstract

La liofilización, es conocida como un método benigno para deshidratar los alimentos y sistemas biológicos; y aunque posee un limitante en los costos de operación tiene un gran beneficio como la conservación de alimentos perecederos en características como su sabor y aroma. Para extraer la humedad de un elemento, primero se lo congela a una temperatura por debajo de menos 50 grados (-50º); luego para conseguir la destilación del agua, se reduce la presión y luego se suministra calor.
