Validación del sistema de limpieza CIP químico para envasado de bebidas de malta en Cervecería Nacional S. A., Ecuador

Abstract

El desarrollo de este trabajo se realizó con el fin de validar el proceso de limpieza de la llenadora de bebidas de malta en Cervecería Nacional S. A., posibilitando asegurar la calidad de nuestro producto. Este proceso de limpieza y desinfección se dio inicio a partir de las recomendaciones del proveedor de los equipos “Krones†y los químicos utilizados “Ecolab†, ambas empresas reconocidas a nivel mundial. En este proceso de validación, usamos una metodología cuantitativa, efectuando varias evaluaciones sobre los ensayos de limpiza y finalmente nos hemos permitido validar la eficacia de los tiempos de contacto y los químicos utilizados, dejando como aporte unas recetas de limpieza que nos permitiran intercambiar experiencias con otras plantas envasadoras. Se consiguio disminuir los tiempos de limpieza a través de la estandarización de trabajos y obtener más tiempo para la producción.
