Abstract

La economía de poblaciones como Chimbo se basa en pequeños emprendimientos que generan empleo y recursos para núcleos familiares que hacen de la artesanía una forma de vida y ocupación permanente Entre las artesanías más importantes del sector se encuentra la elaboración de colaciones, que es un dulce tradicional elaborado a base de azúcar blanca, maní y envasado en cartuchos de papel de forma cilíndrica Los emprendimientos al tener estructuras familiares tradicionales se ven limitados en la ejecución de todos los procesos centrales, como los procesos de producción que dan como resultado negocios de subsistencia El estudio determina los procesos estratégicos principales, formas de organización, planeación y dirección, igualmente establece la percepción que tienen los consumidores
