Abstract

A farinha de mandioca é alimento muito presente na cultura do brasileiro, especialmente do norte e nordeste, compondo grande parte da dieta de carboidratos das famílias com menor poder aquisitivo. Sua produção é presente em todo o mundo, tendo maior produção na Nigéria. No Brasil, o destaque fica para a Região Nordeste, com 35,9% da produção nacional. O cultivo de mandioca no Estado do Pará representa uma fonte de renda para muitas famílias de baixa renda que vivem em áreas rurais.
