Abstract

La presente investigación pretende reflejar una plataforma teórica-metodológica en materia de cadenas agroalimentarias, que plantea la existencia de dos ámbitos de análisis: (a) la cadena agroalimentaria y sus correspondientes eslabones y agentes; y (b) las unidades territoriales en las cuales se localizan los diversos agentes productivos que forman parte de la cadena agroalimentaria. Referente al proceso metodológico, y con la finalidad de que este estudio sea de fácil comprensión para todo tipo de lector y sin la intención de minimizar la Importancia de otras técnicas estadísticas, se diseñó, un estudio de tipo explicativo, de investigación no experimental, de tipo transversal descriptivo. La población de estudio está dirigida a 67 pequeños distribuidores -carniceros- que habitan en diferentes zonas periféricas de Ciudad Victoria, Tamaulipas, México,
