Estrés, ansiedad y conducta alimentaria en estudiantes de Ciencias de la Salud

Abstract

El estudio examina la relación entre estrés percibido, ansiedad y hábitos alimenticios en estudiantes de Ciencias de la Salud de la Universidad Autónoma del Estado de Quintana Roo. Parte de que el estrés y la ansiedad, como respuestas fisiológicas y psicológicas ante situaciones amenazantes, pueden modificar la conducta alimentaria y favorecer el consumo de alimentos ricos en azúcares y grasas como estrategia de afrontamiento emocional. Se empleó un diseño cuantitativo, no experimental, transversal y correlacional en una muestra de 360 estudiantes de los primeros cuatro semestres (121 hombres y 239 mujeres), con edad promedio de 25.64 años (DE=1.54). Las variables se midieron con instrumentos validados: PSS-10 para estrés, GAD-7 para ansiedad y DEBQ para estilos de alimentación (emocional, externa y control alimentario). Mediante un Modelo de Ecuaciones Estructurales se halló una asociación positiva fuerte entre estrés y ansiedad (λ=.71). Además, la ansiedad se relacionó de forma moderada con los hábitos alimenticios (λ=.58) y el estrés mostró un efecto directo moderado sobre dichos hábitos (λ=.48). Los resultados sugieren que la ansiedad podría mediar parcialmente el vínculo entre estrés percibido y patrones alimentarios. Se concluye que los factores emocionales influyen significativamente en la regulación alimentaria en contextos de alta demanda académica, por lo que se recomiendan programas universitarios de manejo del estrés, apoyo psicológico y educación nutricional.
