Implementación de un programa de sostenibilidad en restaurantes: colaboración interinstitucional para innovación en Xicotepec y Valledupar

Abstract

La gestión de residuos en restaurantes es un reto clave de sostenibilidad urbana, pero en municipios intermedios existe limitada evidencia sobre cómo implementar programas con apoyo institucional. Este estudio analiza la implementación de un programa de manejo de residuos en restaurantes de Xicotepec de Juárez (Puebla) y valora la colaboración interinstitucional como mecanismo de fortalecimiento. Se realizó un estudio de caso con métodos mixtos: encuesta tipo Likert aplicada a 37 de 43 establecimientos y entrevistas semiestructuradas; el análisis fue descriptivo y temático. Los resultados muestran alta aceptación: 67.6% considera “muy importante” separar residuos y 75.7% está “muy de acuerdo” en que reducir residuos optimiza costos. Además, 72.9% reporta beneficios “siempre/casi siempre”, 59.5% percibe un impacto “muy positivo” del programa en la rentabilidad y 81.1% estaría totalmente dispuesto a invertir si reduce costos. No obstante, persiste una brecha entre valoración e implementación por barreras operativas: capacitación, infraestructura/espacio, tiempo y apoyo institucional. El taller de compostaje y los materiales (manual e infografías), junto con la articulación interinstitucional, ofrecen una ruta viable de implementación, aunque se recomienda incorporar medición pre–post y seguimiento de adopción.
