Sanitary analysis of free-range eggs produced under backyard conditions

Abstract

The production of free-range eggs in backyard conditions is a common practice in many communities, providing a vital source of nutritious food. However, this form of production also poses significant challenges in terms of food safety, especially due to the potential for contamination with Salmonella spp. This study focuses on evaluating the sanitary quality of free-range eggs produced under these conditions, identifying the presence of Salmonella, and proposing improvements in management practices to reduce microbiological risks. The results confirmed the presence of Salmonella spp. in the free-range egg samples. Serial dilution and agar plating methods proved effective in highlighting the bacteria in both the egg white and yolk. Gram staining was also used to identify the morphology of the isolated strains. Interviews revealed that many producers are unaware of the proper hygiene and management practices necessary to minimize contamination.
