Abstract
Context: Probiotics are microorganisms found in fermented dairy products that, when ingested in adequate doses, confer various health benefits. Objective: To evaluate the fermented dairy products available in the market and check if they comply with regulations regarding their probiotic content, as well as to describe their health benefits. Methodology: A search was conducted for fermented dairy products labeled as containing probiotics. Development: The products were identified in popular self-service stores such as "A", "W", "C", and "L". Subsequently, a comparative table was created with the information on the microorganisms and their content in CFU/mL. Conclusion: It was found that 35.2% of the evaluated products met the minimum CFU declaration (1x10^6) required for fermented dairy products, while the remaining 64.8% did not contain this information and were classified as "Not declared". These products claim to contain specific probiotics in high concentrations, but it was shown that not all comply with their labeling claims according to the Mexican Official Standard (NOM-181-SCFI-2010) based on CFU (1x10^6). The probiotics present in these products were nine species of lactic microorganisms with important functions for the gastrointestinal tract, including: L. Casei Shirota, L. Johnsonii, L. Rhamnosus, L. Acidophilus, L. Plantarum, L. Helveticus, L. Reuteri, Streptococcus Thermophilus, and Lactococcus Lactis.
