Determination of Antioxidant and Nutritional Properties of Minor Millets: A Comprehensive Review

Abstract

Minor millets, an essential group of ancient grains, have gained attention due to their exceptional nutritional and functional properties. These grains are rich in bioactive phytochemicals, including phenolic compounds, flavonoids, and tannins, which contribute to their significant antioxidant activity. The present review consolidates research on the phytochemical composition, antioxidant properties, and health benefits of minor millets, with a focus on their role in disease prevention and nutritional enhancement. Furthermore, the influence of processing techniques, such as acid treatment, milling, and malting, on the bioavailability of nutrients is discussed. The review highlights the potential of minor millets in functional food formulations and their application in combating lifestyle-related disorders such as diabetes and cardiovascular diseases. Additionally, state-wise and global production and consumption data are analyzed to provide a comprehensive understanding of the role of minor millets in food security and sustainable agriculture
