海南熱帶水果冷鏈運輸中溫度波動對果實品質與貨損率的影響

Abstract

海南是我國重要的熱帶水果種植區域,核心品類包含芒果、荔枝、火龍果、菠蘿蜜和蓮霧等,相關產品暢銷國內外市場。冷鏈物流是保障水果長途流通品質的核心環節,溫度不穩定仍是突出難題,其會加快果實呼吸代謝,引發冷害或熱害,助長微生物繁殖,縮減貨架期限,提升損耗比例,造成明顯經濟損失。本文剖析海南熱帶水果冷鏈物流中溫度不穩定對水果品質及貨損比例的影響機制,探究不同溫度波動程度對應的理論體系及損耗路徑,參考發達國家與熱帶水果出口國的溫度管控實踐經驗。基於上述分析,本文提出針對性溫度管控優化方案,強化溫度穩定性,減少損耗量,提升海南熱帶水果供應鏈的綜合競爭力。
