Abstract

This study investigated the proximate, mineral, phytochemical composition and microbial enumeration of herbal teas made from leaves of Vernonia amygdalina, Hibiscus sabdariffa, and Jatropha tanjorensis, blended with ginger rhizomes and lemon zest. Fresh vegetable samples were obtained from markets around makurdi, Benue State Nigeria. They were washed dried and processed into herbal tea and standard methods were used for the analysis. Triplicate values were obtained in each case and expressed on dry weight basis. All data obtained were analyzed statistically using SPSS version 17.0 package.
