El consumidor ante los alimentos de nueva generacion: alimentos funcionales y alimentos transgenicos

Abstract

El mercado alimentario esta siendo sometido a profunos cambios en los paises desarollados tanto desde el punto vista de la oferta como de la demanda. El principal objectivo de este trabajo se centra en el analisis del proceso de aceptacion por parte de los consumidores de dos categorias de alimentos basadas en la aplicacion de buevas teenologias en la industria agroalimentaria: los alimentos transgenicos o geneticamente modificados y los nuevos alimentos functionales de diseno. La principal fuente de informacion ha sido ina encuesta personal a adquireentes de alimentos para el hogar residentes en does regiones espanolas, lo que permitira la comparicion de los comportamientos observados entre ambos territorios diferenciados de forma importante en su estructura de habitat y de consumo alimentario. Los resultados indican en primer lugar los principales cambios observados en las actitudes de los consumidores hacia la influencia de la alimentacion en su salud; y en segundo lugar permiten medir el desarrollo potencial de estos mercados-alimentos transgenicos y functionales-basados en el riesgo en los beneficios buscados, estableciendo patrones de consumidores mediante analisis de segmentacion y modelos logit. Las actitudes personales de los consumidores y el habitat de residencia seran las caracteristicas que mas diferencien entre los segmentos obtenidos...Food markets have been subjected to important changes in developing countries both in terms of products demand and supply. The main objective of this paper is to analyse the consumers reaction to two new food categories which have been recently introduced into the market functional and genetically modified or transgenic products. The information for the study derives from inquires addressed to resident persons responsible for home food supply in two quite distinct Spanish regions: Madrid and Navarra, in order to compare the situation between two markets well differentiated in habitat and food consumption. Results showed the main changes taken place in consumers attitude concerning the influence of food on health as well as a measure of the potential development of the functional and GMO-based markets in relation to risk perception and expected benefits, using segmentation analysis and logit models. The personal attitudes of consumers and their residence habitat were the main factors influencing the differentiation of the markets.
