Nota preliminar sobre los cambios estacionales de la producción y la riqueza de composición de la leche de vaca en España

Abstract

Tomando como base las cantidades de leche entregadas por mes a la industria transformadora entre 1996 y 2000, se observa la semejanza de las cifras porcentuales españolas con las de los EE.MM. de la UE (Alemania, Francia, Reino Unido, y Dinamarca) tomados para contraste. Cualquiera de los años puede servir provisionalmente para fundamentar una distribución porcentual del parámetro de cantidad considerado. No puede decirse lo mismo respecto al promedio mensual de la riqueza de composición (grasa y proteína), pues la divergencia con los porcentajes de los dos parámetros químicos de la leche en los referidos EE.MM. es notoria, de modo que la calidad media de composición de la leche española es netamente inferior. Parece recomendable complementar los datos nacionales relativos a los parámetros examinados con los de las CC.AA. más caracterizadas por su producción de leche.......On the basis of milk quantity delivered per month to dairy industry from 1996 to 2000 it can be observed the similarity between the Spanish percentage figures and those of Germany, France, United Kingdom and Denmark. Any of those years can be provisionally used to establish a percentage distribution of the milk quantity. Not the same can be said about the monthly average composition (butterfat and protein content) of milk. The divergence with the percentage of the two chemical parameters in those countries is well known, so the composition average of Spanish milk is clearly inferior. It seems recommendable to complement national data with those ones of the most characterised for its milk production Autonomous Regions.
