El comportamiento del consumidor y la demanda de aceites vegetales en España: oliva virgen versus oliva/girasol

Abstract

En este trabajo nos proponemos evaluar las posibilidades de incremento de la demanda de aceite de oliva virgen en el mercado español. Para ello, analizamos tanto la situación y evolución de la demanda de este producto en el marco del conjunto de los aceites vegetales comestibles como el comportamiento de compra de los consumidores españoles. Los datos en los que nos apoyamos para conseguir el primero de los objetivos proceden de estimaciones propias, obtenidas mediante un modelo a partir de estadísticas oficiales, considerando las grandes diferencias en los datos que las mismas ofrecen. Respecto del comportamiento del consumidor, la información procede de una investigación propia. Los análisis efectuados apuntan a que es factible incrementar el consumo de aceite de oliva virgen en el mercado español, para lo que es preciso implantar estrategias de diferenciación y posicionamiento, destinadas a segmentos de mercado específicos que localizamos en este trabajo, In this paper we aim to evaluate the possibilities of increasing virgin olive oil demand in the Spanish market. To that end, we analyze both the situation and evolution of the demand of this product in the framework of the edible vegetable oils group, and the buying behavior of Spanish consumers. The data on which we base to achieve the former goal come from our own estimates, obtained witf a model established from official statistics, considering the large differences in the data that they offer. As for the consumer behavior, the information comes from our own research. The carried out analysis point out that it is feasible to increase virgin olive oil consumption in the Spanish market, which requires the introduction of differentiation and positioning strategies, intended for specific market segments which we locate in this paper.
