Abstract

The recently launched project for the set up of an olive oil futures market in Spain made us to wonder if this commodity fulfil the conditions to be considered as an underlying asset in a future contract. These conditions are: (i) the existence of price risk, (ii) to be able to define a broad standardised underlying asset, (iii) high traded volumes in the spot market. In this paper we study if the Spanish olive oil copes with these conditions and their relevance for the future contract specifications. The results we achieve are relevant for potential market users as well as for their members and managers.
