Abstract

Así mismo, la apicultura es la actividad que mejor distribuye la riqueza en el campo yucateco, el cual cuenta con aproximadamente 10,153 apicultores, los cuales son de extracción campesina. Una situación que poco favorece al mercado internacional de la miel yucateca es la reincorporación al mercado de la miel china y argentina, así como la incorporación de nuevos países como el caso de India y Brasil. De igual forma, algunos países, como Francia, están invirtiendo en programas apícolas en países asiáticos, con la finalidad de incrementar su producción de miel. Todo esto en conjunto representa una amenaza para el precio internacional de la miel yucateca. Por estas razones, existe la necesidad de proteger la apicultura del estado de Yucatán, y comenzar a promover el consumo interno de miel, así como la elaboración y exportación de productos que agreguen valor a la miel, de tal manera que se puedan diversificar los mercados de la miel para obtener mayores ingresos. La miel tiene diversas propiedades útiles, entre las más importantes se encuentran: acción energizante sobre el organismo, acción sedante, propiedades emolientes, propiedades antisépticas (desinfectantes) a nivel digestivo, renal y urinario, propiedades digestivas y laxantes, propiedades béquicas (alivio de la tos), propiedades antianémicas y diuréticas. Una manera de mejorar los sistemas de comercialización diversificada de productos apícolas es mediante la incorporación de valor agregado a éstos, lo cual promueve la agroindustria al incorporar los productos de las abejas en cosmetología, medicina alternativa y alimentos. Con respecto al desarrollo de productos para proporcionar valor agregado a los productos apícolas, es interesante considerar la importancia de la miel como alimento y como posible ingrediente en productos cosméticos con valor agregado, así como la importancia económica de comercializar y exportar productos industrializados en lugar de la miel a granel, la cual genera menores precios de venta y menores ingresos para los apicultores. El desarrollo de productos con valor agregado, es sin duda una de las mejores alternativas para elevar el consumo interno de miel (sin descuidar las exportaciones) y al mismo tiempo para incrementar el ingreso económico de las familias de los apicultores dedicadas a esta actividad. Con este proyecto, se pretende desarrollar productos que incorporen valor a los derivados apícolas, obteniendo productos que se ubican en el segmento de mercado de la cosmética. El proyecto consiste en estandarizar la fórmula y el procedimiento para la elaboración de productos que contengan como ingrediente la miel, así como evaluar su estabilidad y vida de anaquel. Los productos son : a) shampoo con miel, b) jabón en pastilla con miel.....The agricultural sector contributes significantly to GDP and foreign exchange earnings to the country, besides being one of the largest employers of people. At the national ambit, bee has great economic and social importance, since it is the second source of foreign exchange in the livestock sector through the export of honey to the European market. Also, beekeeping is the activity that best distributes wealth in the Yucatan area, which has about 10.153 beekeepers of peasant origin. A situation that favors the international market is that some of the Yucatan honey is the move back to China and Argentina honey, and the incorporation of new countries like India and Brazil. Similarly, some countries, like France, are investing in beekeeping programs in Asian countries, in order to increase honey production. All this taken together represents a threat to the international price of Yucatan honey. For these reasons there is a need to protect beekeeping in the state of Yucatan, and start promoting the consumption of honey and the processing and export products that add value to honey, so that they can diversify markets for honey and more revenue. Honey has several useful properties, among the most important are: energizing action on the organism, sedative, emollient, antiseptic (disinfectant) at digestive, renal and urinary, digestive and laxative properties, antitussive properties (relief cough), anti-anemic properties and diuretic. One way to improve marketing systems of bee products is diversified by adding value to them, which promotes agribusiness by incorporating the bee products in cosmetics, alternative medicine and food. Regarding the development of products to provide added value beekeeping products, is important to consider the importance of honey as food and as a possible ingredient in cosmetic products with added value and economic importance of marketing and export of industrial products rather than bulk honey which generates lower sales prices and lower income for beekeepers. The development of value-added products is without doubt one of the best ways to increase domestic consumption of honey (without neglecting exports) and at the same time to increase the income of the families of beekeepers engaged in this activity. The project aims to develop products incorporating value bee products, obtaining products that are placed on the market segment of cosmetics. The project is to standardize the formula and process for the manufacture of products containing honey as a main ingredient and to assess its stability and shelf life. The products are: a) shampoo with honey, b) bar soap with honey.
