Ocena znajomości systemu haccp wśród personelu zakładów gastronomicznych

Abstract

W artykule przedstawiono wyniki badań dotyczących znajomości systemu HACCP wśród pracowników zakładów gastronomicznych. Badaniem objęto 100 osób pracujących w losowo wybranych zakładach gastronomicznych, takich jak: restauracje, bary i kawiarnie. Narzędzie badawcze stanowił autorski kwestionariusz ankiety. Uzyskane wyniki świadczą o niewystarczającym poziomie wiedzy respondentów i wskazują na konieczność prowadzenia szkoleń w zakresie zasad i znaczenia systemu HACCP wśród osób pracujących w branży gastronomicznej. Od ich poziomu wiedzy w dużym stopniu zależy funkcjonowanie systemu HACCP w zakładzie, co przekłada się na jakość i bezpieczeństwo produkowanej żywności.
