Skala marnotrawstwa wyrobów piekarskich w gospodarstwach domowych

Abstract

Celem badań była ocena nadmiaru kupowanych i nieskonsumowanych produktów piekarskich i ciastkarskich. Badania przeprowadzono w 354 gospodarstwach domowych Polski Północnej. Strukturę marnotrawstwa wyrobów analizowano według wybranych czynników: wielkości gospodarstw domowych, liczby miejscowości oraz statusu ekonomicznego. Wyniki poddano analizie statystycznej za pomocą testu chi-kwadrat. Według deklaracji respondentów w 9,6% badanych gospodarstw nie powstały żadne odpady piekarskie. Wyliczono, że miesięcznie w badanych gospodarstwach domowych marnowało się od 0,61 do 1,2 kg chleba, od 0,5 do 0,74 kg drobnych wyrobów piekarskich. Wykazano związek statyczny pomiędzy ilością marnowanego chleba a wszystkimi badanymi czynnikami demograficzno-ekonomicznymi gospodarstw domowych. Czynniki te nie miały natomiast wpływu na skalę niewykorzystanych do konsumpcji drobnych wyrobów piekarskich.
