Impacto Das Informações Nutricionais No Comportamento Do Consumidor De Restaurantes

Abstract

Na existência de informações imperfeitas, as condições de análise da qualidade dos produtos são prejudicadas. Portanto, a compra de alimentos traz consigo certo nível de risco associado, o qual pode ser reduzido com o aumento da quantidade e da qualidade das informações. Objetivou-se, neste estudo, analisar o comportamento do consumidor de restaurantes em relação à informações nutricionais dos alimentos em Campo Grande/MS. Foram entrevistadas 411 pessoas em Campo Grande/MS. A técnica de análise de dados utilizada foi distribuição de frequência, cruzamento de dados e estudo de cluster. O estudo de cluster indicou que entre as classes econômicas A, B e C não houve diferenças significativas no comportamento do consumidor com relação às informações nutricionais, porém, a classe D preocupa-se menos com a disponibilidade dessas informações e com a saudabilidade da alimentação. Nesse sentido, podemos concluir que esse fenômeno está acontecendo na sociedade como um todo, perdendo força somente nas classes sociais mais baixas. ----- When in the presence of imperfect information, the conditions for quality analysis of the products are impaired. Therefore, food purchase brings a certain level of risk associated, which may be reduced by increasing amount and quality of the information. In this sense, this study aims at analyzing the behavior of restaurant consumers in regard to the nutritional information of the food, by interviewing 411 people in Campo Grande, MG, Brazil. The data analysis technique used was frequency distribution, datacross and cluster analysis. The cluster analysis showed that, between economic classes A, B and C, thare were no significant differences in the behavior of the consumer regarding nutrition information. However, class D is less concerned with the availability of this information and the healthiness of the food. With these results, we may conclude that this phenomenon is happening in society as a whole, weakening only in the lower social classes.
