Saisonnalité et contre-saisonnalité pour une alimentation durable

Abstract

Dans un contexte d’inégalités croissantes et de souci marqué des décideurs publics, des acteurs économiques et des consommateurs pour l’environnement, l’adoption de pratiques alimentaires plus respectueuses de l’environnement constitue un défi écologique, économique et social. Un levier en particulier, encore peu exploré, s’offre aux consommateurs pour limiter l’empreinte environnementale des choix alimentaires : le recours aux aliments de saison, qui limitent les importations lointaines et la production locale hors-saison, toutes deux coûteuses en énergie. Mais on connait mal les variations saisonnières de nos consommations. Observe-t-on un réel affranchissement des saisons, ou suivons-nous encore les rythmes alimentaires saisonniers ? De même, s’abstraire des contraintes saisonnières était autrefois le privilège des riches : alors, qu’en est-il aujourd’hui ? Qui veut « manger de saison » ? Dans quelle mesure, enfin, le recours aux aliments de saison peut-il constituer le levier d’une alimentation plus durable ?
