Sécurité sanitaire et normes collectives de distributeurs : impact sur les filières et l'offre alimentaire

Abstract

On observe aujourd'hui une implication grandissante de la grande distribution dans les démarches de sécurisation des produits alimentaires. Quand elles sont le produit d'actions coordonnées entre plusieurs distributeurs, les normes rentrent plutôt dans le registre de relations inter-entreprises, en contraignant les transactions effectuées sur les marchés intermédiaires à satisfaire un cahier des charges préalablement choisi. Quand elles sont individuelles, ces initiatives contribuent à une meilleure différenciation par rapport à la concurrence et favorisent la valorisation sur les marchés. La question est alors d'évaluer l'impact de ces normes sur l'organisation économique des filières agro-alimentaires et de montrer comment elles peuvent effectivement contribuer à une amélioration globale de la sécurité sanitaire.
