L’activité féminine détermine la consommation de repas hors domicile

Abstract

Les modes de consommation de repas ont varié non seulement avec l'évolution des revenus des ménages mais aussi avec les transformations du travail féminin. Le recours à la main-d'oeuvre féminine a accompagné le développement des services dans l'économie, induisant un transfert des tâches domestiques vers la sphère marchande. De ce fait, on observe une importance croissante des dépenses de repas hors domicile ainsi qu'un plus fort degré d'élaboration des produits alimentaires achetés pour être consommés à domicile. Dans ce contexte, on s'intéresse aux comportements de consommation de repas des ménages français, et notamment à leurs choix entre repas au foyer et repas à l'extérieur, et entre diverses formes de restauration. Une analyse microéconomique permet d'expliquer ces arbitrages en fonction des variables économiques (prix des repas, niveau de revenu du ménage, déterminants du salaire potentiel de la femme) et des facteurs socio-démographiques (composition de la famille par âge et par genre).
