Abstract

Nowadays, it can be observed that fish consumption habits and the factors determining consumption are constantly changing due to globalization. In recent years, due to the accelerated world and the global spread of epidemics, consumer emphasis has shifted from price to quality and convenience, as the consumption of healthy foods, in which fish plays a prominent role, is increasingly coming to the fore. The primary aim of the article is to map the characteristics of fish and fishery products consumption and to identify the factors that influence consumers' preferences and decisions regarding the consumption of fish and fishery products. Using the PRISMA framework, we selected articles published between 2000 and 2023 using Google Scholar, Web of Science and Scopus, but we also studied previous research related to the topic. The results show that consumer decisions are most influenced by factors affecting health and sensory organs, production characteristics/specificities and ease of preparation, i.e. convenience.
